Character: Crisp, earthy chocolate dominates aroma and flavour with mango; aromas of passion fruit and hints of vanilla and musk. Well rounded with a gently vibrant acidity and syrupy mouthfeel.
Toraja is the most popular region to produce coffees in Sulawesi. Toraja produces one of the best Arabica coffees in the world. Toraja is also well known for its traditional house called ‘Tongkonan’, shaped like a boat.
Our Toraja coffee this year is from the remote and sparsely populated Mamasa region, west of the Masupu River. This coffee was produced in the traditional manner known as giling basah. Ripe cherries are hand-picked and then pulped in hand crank devices. Following fermentation in small buckets or wicker baskets, the coffee is hulled while it is still wet and the exposed green coffee is dried on a patio or tarp.
