Roaster's Notes
Despite its name, no honey is added during processing. After the cherries are pulped, a portion of the sticky fruit mucilage is intentionally left on the beans as they dry. The amount of mucilage retained influences the flavour profile, balancing the clean characteristics of washed coffees with the sweetness and body of naturals. Honey-processed coffees often display silky texture, caramel sweetness, and notes of stone fruit, citrus, or honey.
Background
Central Sumatera Coffee (CSC), situated in Sumatra, Indonesia, is a family-owned enterprise dedicated to coffee farming, production, and processing, specialising in the creation of high-quality coffee beans. CSC is dedicated to deliver exceptional post-harvest processing treatments to cater to the discerning tastes of coffee enthusiasts.
The story began with a dream from CSC’s founder, Enzo Sauqi, who fell in love with agriculture, especially coffee farms, from the big city to a small village with a long history of coffee farms in Sumatra and the Aceh region.
CSC keep their beans to be traceable and sustainable as a priority, because their belief that customers have the rights to enjoy better quality of coffee by ensuring every step from cherries to green beans are meticulously crafted. CSC aim is to deliver an extraordinary coffee experience that delights and inspires people.
CSC grew organically, they love what they do, together through thick and thin, a small team putting our hope in coffee, dreaming small and then dreaming big to bring all that we have to everyone who enjoys it.
