Roaster's Notes

Natural HASD (High Altitude Slow Dry) is an enhanced natural process where whole cherries are dried slowly in the cool, high-altitude climate. The slower drying allows sugars and flavours to develop more gradually, producing greater clarity and complexity while reducing the risk of over-fermentation. Coffees processed this way are typically vibrant and expressive, with layered fruit notes, floral aromatics, wine-like sweetness, and a refined finish.

Background

Central Sumatera Coffee (CSC), situated in Sumatra, Indonesia, is a family-owned enterprise dedicated to coffee farming, production, and processing, specialising in the creation of high-quality coffee beans. CSC is dedicated to deliver exceptional post-harvest processing treatments to cater to the discerning tastes of coffee enthusiasts.

The story began with a dream from CSC’s founder, Enzo Sauqi, who fell in love with agriculture, especially coffee farms, from the big city to a small village with a long history of coffee farms in Sumatra and the Aceh region.

CSC keep their beans to be traceable and sustainable as a priority, because their belief that customers have the rights to enjoy better quality of coffee by ensuring every step from cherries to green beans are meticulously crafted. CSC aim is to deliver an extraordinary coffee experience that delights and inspires people.

CSC grew organically, they love what they do, together through thick and thin, a small team putting our hope in coffee, dreaming small and then dreaming big to bring all that we have to everyone who enjoys it.
