Background
Nong Kali is a serene village in Laos, known for its lush hills and small, family-run coffee farms producing some of the best coffee in Laos. Coffee here is typically shade-grown and organic. The Bolaven Plateau, where Nong Kali is located, has ideal conditions for arabica production, with its cool climate, fertile deep volcanic soil, and abundant rainfall.
Mr Bai cultivates Java, Typica and Catuai in separate lots under the shade of natural forest trees which he has planted.

For his honey Java lot, Mr Bai picks red cherries during the morning hours. That same day, he floats the cherries, cleans, and sorts them for defects, before pulping them leaving some of the sticky mucilage on the parchment. The parchment is then carefully dried on raised beds, where Mr Bai and his family rakes and monitors the coffee multiple times per day until dry.
